A favorite in many Mexican homes is tortilla soup. If you’ve got some leftover tortillas and you want a quick, easy-to-make dish, you’re going to love this recipe.
- 1 chopped onion
- 2 finely chopped cloves of garlic
- 1 chili (chopped, preferably Jalapeño)
- 1 cup of chicken broth
- 1 can of chopped tomatoes
- 1 tsp salt
- 1 cup shredded cheese
- 1 cup of chopped cilantro
It doesn’t get much easier than this: Fry the onion and garlic, then add the chili, broth, tomatoes, and salt. When the ingredients are cooked through, chop the tortillas intro strips, fry in oil, and add to the soup. Serve and garnish with the cheese and cilantro. Delicious!
